One of the specialties of French cooking is in their sauces. A French saucier can make a piece of boot leather taste like filet mignon with the right sauce. In Austria, there are bakers that can craft pastries so light and flakey they seem to float. The Japanese can turn raw fish into a meal beautiful enough for a museum display. And you won't find the sheer mastery of beef-on-a-bun cooking than you will in a top-notch Coney Island eatery. Each country or region has a culinary specialty, and the culinary college you pick for your education can have an enormous impact on your own specialty development.





Finding a place for your particular "thing" is usually down to finding out what your preference is in terms of knowledge to gain about the industry. Of course, if wandering the world in search of culinary college is not your cup of tea either, you may end up back in North American searching for the culinary college that serves as the perfect amalgamation of all of the knowledge you want to have and the knowledge you wish you didn't have.
